Answer
- Pouches should not be stacked. They should be separated so that steam can circulate between them.
- The plastic side of the pouch doesn’t allow water to go through, so it should face down. The paper surface of the pouch should be facing up to allow moisture to escape (see picture 2).

Bonus: Ideally, pouches should be placed vertically, in an autoclave-safe rack (see picture 3).
